Recently opened on San Antonio’s Northside, Bubble Waffle Bar, offers a unique twist on the Hong Kong Bubble Waffle, GAI DAN JAI. We sat down with owner and entrepreneur, J.R. Gallegos, to learn more about his novelty menu.
J.R. Gallegos opened Bubble Waffle Bar because of his passion for pastries. He says he enjoys making all types of pastries, but has perfected his very own version of the bubble waffle.
Unlike other bubble waffles we’ve had in the past, we found Bubble Waffle Bar’s version to be a little crispier, less eggy and very flavorful. Waffles are offered in a variety of flavors including vanilla, chocolate, red velvet, matcha and purple yam. Ultimately, we opted for red velvet taco style!

Once we had our style of waffle chosen, we picked three ice cream flavors to add to the waffle. If you’re a big Blue Bell Ice Cream fan, then you’re gonna LOVE that all ice cream served is Blue Bell brand. We were excited to see our favorite flavor offered, Moo-llennium Crunch, made with a combination of dark chocolate chunks, creamy carmel chunks, roasted pecan halves and walnut pieces.
After picking our ice cream, it was time to dress that baby up! We topped off our waffle taco with nutella syrup, sprinkles & a cute little character. By the time we were done, our waffle was loaded and looked almost too big to consume. Not to worry though, we managed to eat the whole thing.
Additional items served at Bubble Waffle Bar include elaborate shakes, bubble tea and even lunch! They offer several sandwiches such as Ham and Cheese, Turkey & Meatball served on a bubble waffle. While we didn’t get to try these yet, the sweet and savory combination sounds amazing, and will definately have us going back for more!
